The Amazonas region of Peru is known for its high altitudes, nutrient-rich soil, and ideal climates that make it perfect for producing organic, high-quality coffee. Located at 1,800 meters above sea level, the slow maturation of coffee cherries naturally enhances the flavor profile. The region is home to generations of coffee producers who use traditional methods to cultivate and process exceptional coffee.
Producer
Israel Carranza, born and raised in the town of Gracias a Dios, has worked in coffee farming since childhood. He now manages his farm, La Fortuna, alongside his three children. As a member of Alpes Andinos, Israel benefits from higher prices for his quality coffee and access to training programs. The farm, aptly named "The Fortune," supports his family by providing the means for education and basic necessities. Israel’s commitment to quality has made La Fortuna one of the standout coffee producers in the Amazonas region.
Process
Harvesting at La Fortuna spans from June to September. Ripe cherries are selectively handpicked and floated in clean water to remove low-density cherries. The cherries are then fermented in barrels for eight days to carefully break down the sugars in the fruit. After fermentation, the beans are drained and dried on raised beds for 15–20 days until the ideal moisture content is achieved. Once dried, the beans are stored in polypropylene bags to maintain quality and transported to the Alpes Andinos warehouse in Jaen for quality analysis and export preparation.
Sustainability
La Fortuna operates with a strong commitment to sustainability. Producers in the Amazonas region practice 15-year crop rotations, using the "Zoca" method to rejuvenate coffee plants while planting new trees in advance to ensure continuous production. Organic fertilization is prioritized, including the use of "guano de las Islas," a nutrient-rich natural fertilizer derived from seabird excrement collected on Peru’s coastal islands. These practices not only maintain soil health but also ensure the long-term viability of coffee farming in the region.
