The farm sits at an altitude between 1,100 and 1,400 meters, nestled between a natural rainforest reserve on one side and the Costa Rican border on the other. This location provides a unique set of environmental conditions, with cold temperatures, strong winds, and regular rainfall. These challenging conditions, though harsh, contribute to the intense flavor profile of La Santa coffee. Finca La Santa has been part of a family tradition that began in the 1960s when Jose Manuel Gallardo’s father first came to the region to plant agriculture. Coffee was introduced to the farm about a decade ago, and today it is managed by Jose and his wife, Aileene. The finca is divided into five micro-areas, each with its own microclimate, allowing for the cultivation of unique and varied coffee lots. While much of the coffee processing happens on-site, the final preparations take place at a larger mill due to capacity constraints.

His nearly obsessive attention to detail, from selecting seeds to processing the beans, plays a vital role in the success of Finca La Santa’s coffee. Process

Jose and Aileene meticulously manage every stage of the production process. They only pick the ripest cherries, cup the coffee continuously during processing, and separate the lots to identify the best microlots.

The unique location of the finca, combined with its five distinct microclimates, allows for the production of coffee with a complex and unique flavor profile.
