The finca and its owner, Jose Manuel Gallardo, combine quality, passion, dedication, and uniqueness in a way that results in amazing coffee. The finca is situated between 1,100 and 1,400 meters in the area of Jurutungo, Santa Clara, in the province of Chiriqui. It is nestled between a natural rainforest reserve on one side and the border of Costa Rica on the other. The location and environment of the finca are very challenging, with cold temperatures at night and lots of wind and rainfall. Even so, the passionate and engaged estate owner, Jose, managed to produce incredible cups of coffee. According to Jose, the rough conditions contribute to the coffee’s low productivity but give it an intense flavor. The cold wind and rain from the Atlantic through the mountains dividing Panama play an important role in the unique taste of La Santa coffee. The finca has been part of a family tradition, starting when Jose’s father came to the region in the 1960s and began planting agriculture. Coffee was introduced to the farm about 10 years ago, and now Jose and his wife Aileene manage the finca. They have divided it into five micro-areas, each located in different microclimates. They process all their coffees on-site, with final preparations done at a bigger mill due to limited capacity. The secret to their coffee’s success is a combination of factors, including Jose’s nearly obsessive dedication to growing and processing exceptional specialty coffee. He speaks with passion about his farm and coffee and is continuously learning to enhance his knowledge of farming and processing. Another reason for their coffee’s success is their meticulous attention to detail. They take great care of the coffee plants, pick only the ripest beans, cup continuously during processing, and separate lots to determine the best microlots. The selection of seeds, the particular location of the finca, and its various microclimates also contribute significantly to the success of their coffee. Biodiversity at the farm is highly valued. There is already a great variety of birds on the finca, and in the coming years, Jose and Aileene plan to invest even more time and effort in conserving biodiversity.
